We start this experience by welcoming and getting to know our guests and what their encounters with Mexican cuisine have been. Diners are seated at the MayaMi Cocina "palapa," an open-sided dwelling with a thatched roof made of dried palm leaves that seat 10 people, for an intimate and unique, outdoor culinary experience. Throughout the event, the chef takes diners through the history of Mayan cuisine. Each dish will be prefaced with a detailed explanation of the traditional ingredients as they’ve been used through Mayan history as well as how they’ve been adapted into the recipes served. The meal is divided into seven courses of entirely homemade dishes that could be adapted to be fully plant-based. We want our diners to leave this experience delighted and with new knowledge of Mayan culture and cuisine.

I'm Juan Pablo Diaz and I grew up in Merida, Mexico, Merida, the vibrant capital of the Mexican state of Yucatán. I began cooking 8 years ago by watching my mother in the kitchen. In order to get the main ingredients in my hometown, we’d have to wait for the “subienda” to stock on proteins from meat and fish, between them, we’d rely on fresh seasonal ingredients to make plant-based recipes. Most of my training came from learning with family members and making combinations from what was in season to execute delicious recipes that don’t produce any waste. After moving to the states 5 years ago, I continued my training with chefs from all over the world but with Maya’Mi Cocina my goal is to go back to the cuisine I grew up with.
