Cacao is very important in our culture, and drinking hot chocolate for breakfast and/or for dinner, as well as every special occasion, is a delicious tradition in Oaxaca!
In our class, you’ll learn how to make it from scratch, the traditional way using traditional tools.
Before we begin, you will enjoy some coffee, atole and pan available while we introduce ourselves. We will be making the chocolate in a traditional outdoor kitchen, and you will learn how to grind the cacao beans and make it into a paste using a metate (traditional stone grinder) and hand mill. The different grinding methods will give the chocolate a different taste! Once the chocolate is ready, you will mold some to take with you, and we will prepare some to drink together. During this time, I will share more on cacao and other traditional oaxacan drinks that also use cacao.

I was born in Oaxaca, but grew up in Santa Barbara, CA. Although I have spent most of my life in California, I always had a much stronger connection with my Oaxacan culture. During culinary school, and as my grandmother began to get older , I grew more curious in learning more about our family's recipes and began learning them, from my 99 year old grandmother! After working as a line and pastry cook for ten years, my last job being at the Four Season's Biltmore, I decided to move back home to Oaxaca. I want to continue learning about my ancestors and culture, and be able to share some of that with people from all over the world!

Class will take place at my home right in Oaxaca centro. It’s an old colonial house made of green cantera and bricks. It has two patios, one where the out door kitchen is, and the other where we will enjoy coffee and drinking the freshly made chocolate.
