Everyone loves a great cocktail, but many find all the specialized tools, exotic ingredients, and obscure lingo intimidating. This Experience aims to begin to break down the barriers that keep you from realizing your mixology dreams.

You will be guided by Prof. Ian Glomski, Ph.D., Founder and Head Distiller at Vitae Spirits Distillery, through the basics of cocktail theory. Dr. Glomski is a former professor of Microbiology at the University Of Virginia Medical School that will share his expertise in spirits distillation, ingredient production, and cocktail design.

The Experience will unfold as follows:
1. Equipment Overview
2. Cocktail Theory
a. Balance
b. Basic Elements
i. Spirit: the center piece
ii. Sweet: tempers heat of alcohol
iii. Sour/Bitter: tempers sweetness
iv. Length: dilution
3. The Mr. Potato Head Approach
a. Shaken cocktail archetype= Daiquiri
b. Stirred cocktail archetype= Manhattan
4. Hands On- Attendees balance a cocktail themselves… and get to drink 2 cocktails in the process!
a. Daiquiri- Too sour, too sweet, just right
b. Martini- Too dry, too sweet, just right

At the end of our Experience attendees will have a foundation from which to start exploring the wonderful world of cocktails from their home and the ability to “Wow” friends with their newfound talents at making a perfectly balanced cocktail.

A former Professor of Microbiology at the University Of Virginia School Of Medicine, I have had a profound fascination for over twenty-five years for microbes and how they sculpt our macroscopic world. An experienced brewer, winemaker, cheesemaker, meat curer, kefir culturer, veggie pickler, wild mushroom forager, and infectious disease specialist, anything having to do with microbes turns me on; having trained at the Pasteur Institute of Paris, founded by the father of modern fermentation Louis Pasteur.

With all of my experience teaching at UVA under my belt, there is nothing I like more than sharing my passion for distillation with enthusiastic newbies and experienced moonshiners alike!

The guests’ Experience will take place on Vitae Spirits production floor and tasting room, which was selected as the Best Commercial Interior (out of 350 submissions) by the National Association of the Remodeling Industry in 2018. As an extra bonus for those always looking for a good meal, our distillery is a block away from Ace Biscuit & Barbecue, one of the area’s best BBQ joints.

Ian was a great instructor. What an amazing bio and experience. As a chemist and professor, he was able to make everything understandable. We had the whole distillery to ourselves. Ian let us in a little early and we just told stories and got to know each other. We also bought a lot of his inventory to take home. He makes some very nice rum and gin. Highly recommend!
