The Benedictine Abbey of Saint-Hilaire is located in the picturesque valley of Lauquet. Occupying a dominant position in the heart of the ancient medieval fort of Saint-Hilaire, this monastery is organized around its Gothic cloister. It is here that in 1531, the monks invented the first sparkling wine in the world, Blanquette.
This 6th century foundation is best known for a splendid sarcophagus, carved in vivid relief by the Master of Cabestany and depicting the martyrdom of Toulouse’s first bishop St Sernin.
Ancienne abbaye bénédictine fortifiée, abritant le fameux "sarcophage" du Maitre de Cabestany. Le visiteur appréciera la sérénité de son cloitre gothique desservant l'église romane, le logis abbatial, les réfectoires et les celliers. C'est ici que les moines inventèrent la blanquette en 1531!
